PHILADELPHIA NO-BAKE CHEESECAKE

This Philadelphia no-bake cheesecake is incredibly creamy, delicious, and surprisingly simple to prepare. It features a classic graham cracker crust paired with a smooth, velvety cheesecake filling. Top it off with whipped cream and a fruity sauce for a treat that’s sure to impress everyone!

INGREDIENTS


Crust

  • 2 cups / 200 g / 7 oz graham cracker crumbs
  • 1/2 cup / 115 g / 4 oz salted butter, melted
  • 1/3 cup / 85 g / 3 oz granulated sugar

Filling

  • 24 oz / 680 g Philadelphia cream cheese, softened (3 x 8 oz packages, see note below)
  • 1/2 cup / 100 g / 3.5 oz granulated sugar
  • 3 tsp vanilla extract
  • 1/4 cup / 60 g / 2 oz sour cream
  • 3 tbsp fresh lemon juice
  • 1 1/4 cups / 300 ml / 10 fl oz heavy whipping cream, cold
  • 3/4 cup / 85 g / 3 oz powdered (confectioners’/icing) sugar

INSTRUCTIONS

Prepare the crust

  • In a medium-sized mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  • Press the mixture into the bottom and up the sides of a 9-inch / 23 cm springform pan. Use the flat side of a dry measuring cup to compact the crumbs.
  • Place the crust in the refrigerator to chill while you make the filling.

Make the filling

  • In a large bowl, beat together the cream cheese, sugar, and vanilla extract until smooth and well combined.
  • Add the sour cream and lemon juice, mixing until fully incorporated. Set aside.
  • In a separate bowl, beat the heavy cream and powdered sugar on high until stiff peaks form.
  • Gently fold half of the whipped cream into the cream cheese mixture, then fold in the remaining whipped cream, being careful not to deflate the filling.

Assemble and chill

  • Pour the cheesecake filling into the prepared crust, smoothing the top evenly.
  • Refrigerate the cheesecake for 5 to 6 hours, or until it is fully set.

Serve

  • Before serving, warm a knife under hot water, then dry it off with a towel. Run the knife around the edge of the cheesecake to loosen it, then remove the springform pan ring.
  • Transfer the cheesecake to a serving plate, slice, and enjoy with your favorite toppings.
