Lemon-Basil Cookies! These simple, zesty lemon cookies, infused with aromatic fresh basil, are the perfect springtime treat. With the dough quickly pulsed together in a food processor, making a batch is effortless!
INGREDIENTS
- 1 cup all-purpose flour
- ½ cup confectioners’ sugar
- 1 stick (8 tablespoons) cold butter, diced
- Zest of 1 lemon
- ½ teaspoon lemon juice
- ¼ teaspoon vanilla bean paste (or vanilla extract)
- 2 tablespoons fresh basil leaves (about 5 large leaves), roughly chopped
- ¼ teaspoon sea salt
- Optional: Sparkling sugar for garnish
INSTRUCTIONS
- Preheat & Prepare: Preheat your oven to 375°F (190°C) and line a cookie sheet with parchment paper or lightly grease with non-stick cooking spray.
- Make the Dough: In a food processor, combine all ingredients. Pulse until the mixture begins to clump together and form dough.
- Shape the Cookies: Transfer the dough to a bowl and ensure everything is well mixed. Using a 1-tablespoon measure, scoop out the dough and roll it into balls. (If the dough is too sticky, chill for about 20 minutes or dust your hands with powdered sugar before rolling.)
- Flatten the Dough: Place dough balls a few inches apart on the prepared baking sheet. Dip the bottom of a drinking glass into powdered sugar and gently press down to flatten the cookies into disks. (For thicker cookies, press lightly; for thinner, crispier cookies, press more firmly.)
- Optional Garnish & Bake: Sprinkle with sparkling sugar, if desired. Bake for 10-12 minutes, or until the edges just start to turn golden.
- Cool: Allow the cookies to cool for a few minutes before transferring them (they may be crumbly when warm).
Enjoy these fragrant, buttery treats!
