GREEK ROASTED POTATOES AND WHIPPED FETA

Elevate your dinner table with this irresistible combination of crispy roasted potatoes and creamy whipped feta. Inspired by the vibrant flavors of Greece, this dish is a delightful blend of savory and tangy. Imagine tender potatoes, golden-brown and crispy on the outside, paired with a luscious, airy feta spread. It’s the perfect side dish for any occasion, from weeknight dinners to special gatherings.

INGREDIENTS

For the Potatoes:

  • 3 large baking potatoes, cut into even chunks
  • 1 lemon
  • 4 cloves of garlic
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp salt
  • 1 tsp pepper
  • 3 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp chili flakes or red pepper flakes

For the Whipped Feta:

  • 60g Greek yogurt
  • 100g feta cheese
  • 2 tbsp extra virgin olive oil
  • 1 lemon (juice and zest)
  • Salt and pepper to taste

INSTRUCTIONS

  • Prepare the Potatoes:
    Parboil the potato chunks for 10 minutes. While boiling, preheat the oven to 220°C and place a baking tray with 2 tbsp olive oil in the oven to heat up.
  • Season the Potatoes:
    Drain the parboiled potatoes and shake them to fluff them up. Carefully transfer the potatoes into the hot baking tray and season with oregano, thyme, salt, and pepper. Toss them to ensure an even coating.
  • Roast the Potatoes:
    Add the quartered lemon and unpeeled garlic cloves to the tray with the potatoes and roast for 20 minutes.
  • Finish Roasting:
    After 20 minutes, remove the lemon and garlic from the tray and return the potatoes to the oven for another 25 minutes, until golden and crispy.
  • Make the Lemon-Honey Mixture:
    Squeeze the garlic from its skins (it should be soft and easy to remove) and finely chop the lemon (including the rind) and garlic into a paste. In a bowl, combine the lemon-garlic paste with the remaining olive oil, honey, and chili flakes. Stir well.
  • Prepare the Whipped Feta:
    In a blender, combine the feta, Greek yogurt, olive oil, lemon zest and juice, salt, and pepper. Blend until smooth and creamy.
  • Assemble the Dish:
    Spread the whipped feta on one half of the plate. Drizzle any remaining honey-lemon mixture over the feta. Add the roasted potatoes on top and garnish with freshly chopped parsley.
  • Serve and Enjoy:
    Serve immediately, and enjoy the crispy, flavorful potatoes with the creamy whipped feta sauce!
