CREAMY TORTELLINI RECIPE

This creamy tortellini recipe is absolutely incredible! It’s super easy to whip up in just 20 minutes using only one pan. The perfect solution for a quick and delicious weeknight dinner!

INGREDIENTS

  • 15oz/400g refrigerated cheese tortellini
  • 1 tbsp olive oil
  • 1/3 cup milk
  • 2/3 cup sour cream
  • 1/2 cup grated mozzarella
  • 1 1/2 cups fresh baby spinach
  • 1 small tomato, chopped
  • 1 garlic clove, minced
  • 2 scallions, chopped
  • 2 tbsp chopped parsley or basil
  • Parmesan cheese (for topping)
  • Freshly ground black pepper
  • Salt to taste

INSTRUCTIONS

  • Cook the tortellini according to the package instructions, or for a one-pan method: heat 1 tbsp olive oil in a large, deep pan over medium-high heat. Add the tortellini and sauté for 30 seconds to a minute until lightly golden brown.
  • Lower the heat and pour in the milk, stirring to combine. Let it cook for another minute.
  • Stir in the sour cream, then reduce the heat slightly. Cook for 2-3 minutes, until the sauce thickens.
  • Add the garlic, scallions, tomato, spinach, and parsley, and season with freshly ground black pepper.
  • Sprinkle in the grated mozzarella, allowing the sauce to thicken further. Stir everything well and taste. Adjust with more salt and pepper as needed—don’t be afraid to add a generous amount of pepper!
  • Remove from heat, serve immediately, and top with Parmesan cheese for an extra burst of flavor. Enjoy!
