CHOCOLATE CHIP APPLESAUCE COOKIES

These healthy chocolate chip applesauce cookies are gluten free, dairy free and paleo friendly. They make for a great low sugar dessert or healthy breakfast cookie, as they are only sweetened with applesauce

Ingredients

  • ½ cup unsweetened applesauce
  • ½ cup unsweetened almond butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 Tbsp coconut flour (22g)
  • 2 Tbsp ground flax*
  • ½ tsp baking soda
  • ½ tsp cinnamon (optional)
  • ¼ tsp salt
  • ¼ cup dark chocolate chips, chopped

Instructions

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • In a medium mixing bowl, combine applesauce, almond butter, egg, and vanilla extract. Whisk until smooth.
  • Add the coconut flour, ground flax, cinnamon (if using), baking soda, and salt. Mix until well combined.
  • Fold in the chopped chocolate chips.
  • Let the batter sit for 5 minutes to thicken.
  • Use a large cookie scoop to scoop about 2 tablespoons of dough onto the baking sheet, making 11 cookies.
  • Bake for 10-11 minutes at 350°F.
  • Remove from the oven, allow the cookies to cool slightly on the baking sheet, then transfer to a wire rack to cool completely.

    Notes
    *To make ground flax, grind whole flax seeds using a coffee grinder.
