This Broccoli Cheese Stuffed Chicken Breast is packed with a creamy broccoli cheese filling, seared to golden perfection in a skillet, and finished off in the oven. It’s a recipe I’ve been eager to try for ages, and now that I’ve finally made it, I only wish I had done it sooner!
INGREDIENTS
- 3 large chicken breasts
- Salt and pepper, to taste
- 1 ½ tsp garlic powder, divided
- ¼ tsp paprika
- 1 cup broccoli florets, finely chopped
- ½ cup red bell pepper, finely diced
- 1 cup mild cheddar cheese, shredded
- 1 tbsp mayonnaise
- 2 tbsp olive oil
INSTRUCTIONS
- Preheat the oven to 425°F (220°C).
- Prepare the chicken: Season both sides of the chicken breasts with salt, pepper, paprika, and ½ tsp of the garlic powder. Using a sharp knife, carefully cut a pocket into each chicken breast without slicing all the way through.
- Make the filling: Place the broccoli in a microwave-safe dish with 2 tablespoons of water. Cover with plastic wrap and microwave for 1 minute. Drain any excess water. Add the bell pepper, cheddar cheese, mayonnaise, remaining garlic powder, and salt and pepper to taste. Mix well.
- Stuff the chicken: Divide the filling among the chicken breasts, securing the edges with toothpicks if needed.
- Sear the chicken: Heat a large, oven-safe skillet (cast iron works great) over medium heat. Add olive oil and sear the chicken for 3–4 minutes per side until golden brown.
- Bake: Cover the skillet with foil and transfer it to the preheated oven. Bake for 15–17 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Rest: Let the chicken rest, covered, for 5 minutes before serving.
NOTES
- These chicken breasts are large, so half a chicken breast typically serves one person.
- Ensure the skillet handle is oven-safe if not using cast iron.
