RECIPE FOR SHRIMP SCAMPI

We’ve been making this shrimp scampi recipe for about eight years, and it’s become a beloved family favorite. I love that it comes together in just 15 minutes, and my kids eat it with minimal fuss. INGREDIENTS

  • 8 oz Angel Hair Pasta
  • 2 tbsp Butter
  • 1 lb Frozen Shrimp, peeled and deveined
  • 3 cloves Garlic, minced
  • 1/2 tsp Red Pepper Flakes
  • 1/4 cup Chicken Broth
  • 1/4 cup Fresh Lemon Juice
  • 1 tbsp Dried Parsley
  • 1/4 cup Grated Parmesan

INSTRUCTIONS

  • Cook the pasta according to the package directions.
  • While the pasta cooks, place the frozen shrimp in a large pan over high heat, cover, and cook until thawed and evenly heated, about 3-5 minutes. Drain any excess liquid.
  • Reduce the heat to medium and add the butter to the pan. Once melted, stir in the garlic and red pepper flakes. Cook for 2-3 minutes until fragrant.
  • Add the lemon juice and chicken broth, allowing the mixture to simmer for a few minutes.
  • Once the pasta is done, drain it well and add it to the pan with the shrimp. Toss everything together with the Parmesan and dried parsley until well combined.
  • Serve immediately and enjoy!
