QUICK PUMPKIN PANCAKES WITH PANCAKE MIX

INGREDIENTS

  • 2 cups pancake mix
  • 1 tablespoon sugar
  • 1 teaspoon pumpkin pie spice
  • ½ cup pumpkin puree
  • 2 teaspoons vanilla extract
  • 1 ¼ cups water or milk

INSTRUCTIONS

  • In a large bowl, whisk together the pancake mix, sugar, and pumpkin pie spice.
  • Add the pumpkin puree, vanilla extract, and water (or milk). Whisk until just combined—be careful not to overmix.
  • Heat a nonstick pan over medium heat. Once hot, brush with a little butter.
