LOW CARB CHICKEN CLUB SANDWICH

This Keto & Low Carb Chicken Club Sandwich is the ultimate way to enjoy a clubhouse sandwich without the carbs. Made with lettuce wraps instead of bread, this easy-to-make, fresh, and healthy version is also gluten-free, offering a delicious twist on a classic favorite.

Ingredients

  • 6 Iceberg lettuce leaves
  • 6 oz cooked chicken breast
  • 4 slices bacon
  • 4 oz deli ham
  • 2 slices cheese
  • 4 slices tomato
  • 2 tbsp mayonnaise

Instructions

  • Cook the bacon and warm the cooked chicken. Then, cut the 6 large lettuce leaves into roughly square shapes.
  • Place 2 lettuce leaves on a plate and spread half of the mayonnaise on top. Add the ham, chicken, and cheese layers.
  • Top the meat with another 2 lettuce leaves, and spread the remaining mayonnaise on top.
  • Place the tomato slices and bacon on the mayo-covered leaves.
  • Finish by covering with the last 2 lettuce leaves. Secure the sandwich by inserting 4 toothpicks or skewers into each corner.
  • Slice the sandwich into 4 parts, cutting diagonally from corner to corner.

This recipe makes 2 servings (or 4 small sandwiches).
