These Keto granola bars are incredible! They’re healthy, low-carb, gluten-free, and incredibly satisfying. While they don’t contain traditional granola, they make for an excellent substitute!

- Silicone granola bar pan (or brownie pan or muffin pan)
Ingredients
- 1 cup chopped or smashed pecans (125g)
- 1 cup thinly sliced almonds (110g)
- 1 cup packed unsweetened coconut flakes (75g)
- 1 large egg
- 3 tbsp stevia or a stevia blend (2 parts stevia, 1 part sugar) (45g)
- 2 tbsp peanut butter (sugar-free) or almond butter
- 1 tbsp coconut oil (15g)
- 3/4 tsp salt (4g)
- 1/4 cup sugar-free chocolate chips (45g)
Instructions
- Preheat the oven to 350°F (176°C).
- Crush the pecans by placing them in a bag or using a food processor. In a large bowl, combine the crushed pecans, coconut flakes, and sliced almonds.
- In a separate bowl, whisk together the egg, stevia, peanut butter (or almond butter), and coconut oil.
- Add the salt and optional chocolate chips to the nut mixture, then pour in the wet ingredients and stir to combine.
- Evenly distribute the mixture into a granola bar pan, brownie pan, or muffin pan (a bar pan gives the best shape). Press the mixture down with a spoon or spatula to pack it in.
- Bake on the middle rack for 18–20 minutes, or until the top is golden brown.
- Allow the bars to cool completely before serving. Enjoy!
