INDIAN PICKLE MASALA RECIPE

Pickle Masala, also known as Achar Masala, is a vibrant, vegan, and gluten-free Indian spice blend that adds a bold mix of spice, sweetness, and tang to pickles. WHAT IS ‘PICKLE MASALA’?

Masala, a blend of ground spices, is one of the most popular and simple ways to infuse dishes with the vibrant flavors of whole spices.

Pickle Masala, also known as Achar Masala, is a staple Indian spice mix, primarily used to enhance the flavor of various Indian pickles. In some pickles, it elevates the taste, while in others, it enhances the color. Regardless, it is an essential ingredient in any authentic Indian pickle.

INGREDIENTS

  • 3 tablespoons mustard seeds
  • 2 tablespoons amchur (dry mango powder)
  • 1 tablespoon red chili powder
  • 1 tablespoon turmeric powder
  • 1 tablespoon fennel seeds (saunf)
  • 1 tablespoon fenugreek seeds (methi dana)
  • 1 tablespoon salt (or to taste)
  • 2 teaspoons nigella seeds (kalonji)
  • 1 teaspoon carom seeds (ajwain)

INSTRUCTIONS

  • In a heavy-bottomed pan, dry roast the mustard seeds for 1–2 minutes, then transfer them to a bowl.
  • Next, dry roast the fennel seeds, stirring constantly, until their aroma is released. Transfer them to the same bowl as the mustard seeds.
  • Repeat the process for the fenugreek seeds, carom seeds, and nigella seeds, roasting each individually.
  • Once all the spices are roasted, add them to a blender and grind into a coarse powder.
  • Transfer the ground spice mix to a bowl. Add salt, amchur, red chili powder, and turmeric powder. Stir well to combine.
  • Store the Achaar Masala in a clean, dry, airtight jar at room temperature.
  • For longer shelf life, refrigerate the masala, where it will stay fresh for over 6 months.
