INGREDIENTS

For the Sliders:

  • 2 lbs. chicken tenders (boneless chicken breasts or thighs work too)
  • 1 pack Hawaiian slider buns or dinner rolls
  • Mayonnaise, to taste
  • Sweet Baby Ray’s Golden Mustard (or honey mustard as a substitute)
  • 8 strips crispy bacon, cooked
  • Colby Jack cheese (enough slices for all sliders)
  • ½ head lettuce, chopped
  • ½ small red onion, thinly sliced
  • 2 Roma tomatoes, thinly sliced
  • 4-5 tablespoons oil (for marinating and cooking the chicken)

For the Blackened Seasoning:

  • 2 tablespoons smoked paprika (or regular)
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano

For the Butter Topping:

  • ½ stick butter, softened
  • 1 tablespoon fresh parsley, chopped
  • 2 cloves garlic, minced

INSTRUCTIONS

  • Marinate the Chicken:
    • Place the chicken tenders in a large zip-top bag or bowl.
    • Add several tablespoons of blackened seasoning and a few tablespoons of oil.
    • Toss to coat evenly, ensuring all pieces are well-seasoned.
  • Cook the Chicken:
    • Heat a skillet over medium-high heat with a little oil, or preheat a grill.
    • Cook the chicken for about 3 minutes per side, flipping only once, until fully cooked.
  • Prepare the Butter Topping:
    • In a small bowl, mix the softened butter, parsley, and minced garlic.
    • Microwave for about 30 seconds until melted, then stir to combine.
  • Toast the Buns:
    • If needed, slice the slider buns in half using a serrated knife.
    • Place them cut-side up on a baking sheet and toast under the broiler for a few minutes until golden brown.
    • Flip the top buns over so their domed sides face up, leaving them on the same pan.
  • Assemble the Sliders:
    • Spread a thin layer of mayonnaise on the bottom buns.
    • Evenly distribute the cooked chicken tenders over the buns.
    • Drizzle with golden honey mustard, then layer cheese slices on top.
  • Final Toasting:
    • Spread the butter mixture over the top buns.
    • Return the baking sheet to the broiler for another 1-2 minutes, until the cheese softens and the top buns are slightly toasted.
  • Add Fresh Toppings & Serve:
    • Top each slider with crispy bacon, tomato slices, red onion, and lettuce.
    • Drizzle with more honey mustard if desired.
    • Place the top buns over the sliders, slice to separate, and serve immediately.

Enjoy!
