EASY LEMON CURD RECIPE

INGREDIENTS

  • 1 tablespoon lemon zest (optional for added flavor)
  • 3/4 cup fresh lemon juice (from 3-4 large lemons)
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 3 large eggs
  • 4 large egg yolks
  • 4 tablespoons butter (1/2 stick, chopped)

INSTRUCTIONS

  • In a small saucepan, combine lemon zest, lemon juice, sugar, and salt. Place over medium heat and cook for about 5 minutes until the sugar and salt dissolve.
  • While the mixture is heating, whisk together the 3 eggs and 4 egg yolks in a medium bowl until smooth.
  • Once the lemon mixture is hot, slowly pour half of it into the bowl with the eggs, whisking constantly to temper the eggs. Gradually add more of the hot liquid, whisking to avoid curdling the eggs.
  • Return the saucepan to the heat, then slowly whisk in the egg mixture. Continue whisking over medium heat for about 5 minutes until the curd thickens. When you drag a whisk through the mixture, it should leave visible marks on the surface.
  • Pour the lemon curd through a fine mesh strainer into a clean bowl to remove any cooked egg bits (this is optional but recommended for a smoother texture).
  • Stir the chopped butter into the warm curd until fully melted and incorporated. For a silky finish, consider spooning some curd straight from the pot to taste.
  • To prevent a skin from forming, press a piece of plastic wrap directly onto the surface of the curd. Let it cool in the refrigerator for about 2-4 hours. It will continue to thicken as it cools.
  • Transfer to an airtight container. The curd will keep for up to 1-2 weeks.

NOTES

  • Lemon zest adds extra tang and depth, but if you’re aiming for a smoother texture, feel free to skip it.
  • While this recipe uses 4 tablespoons of butter, some versions use up to 8 tablespoons for a richer curd. Feel free to adjust based on your taste preferences!
