ASIAN GROUND TURKEY WITH GREEN BEANS AND RICE

This Chinese-inspired green beans with ground turkey recipe is one of my absolute favorites! It’s quick, flavorful, and healthy, making it a perfect go-to dinner. INGREDIENTS

  • 1 cup medium grain rice (uncooked)
  • 1 tablespoon sesame oil
  • 1 small bunch green onions, thinly sliced
  • 2 cloves garlic, minced or crushed
  • 1 pound ground turkey
  • 2 tablespoons chili garlic sauce
  • 2 tablespoons hoisin sauce
  • 1 teaspoon crushed ginger
  • 1 pound green beans, washed and trimmed (or Chinese long beans if available)
  • 1 tablespoon soy sauce
  • 1 tablespoon seasoned rice vinegar

INSTRUCTIONS

  • Start cooking the rice in lightly salted water.
  • When the rice is about 15 minutes from being done, heat a large skillet over high heat. Add sesame oil and sauté the green onions and garlic for about 2 minutes.
  • Stir in the ground turkey and cook for 3-5 minutes, breaking it up as it cooks until it’s mostly browned.
  • Add the chili garlic sauce, hoisin sauce, and ginger, and stir to combine. Then, add the green beans and soy sauce, mixing well to coat. Continue cooking on high heat for another 7-9 minutes, stirring frequently, until the beans are slightly tender.
  • Stir in the rice vinegar and cook for one more minute. Serve the mixture over the cooked rice.
