- ½ cup vanilla protein powder
- ⅓ cup pure maple syrup
- 2 tbsp coconut oil (melted)
- 2-4 tbsp milk of choice
- 2 tsp vanilla extract

INSTRUCTIONS
- Heat-Treat the Flour: In a microwave-safe bowl, heat the flour for 60-90 seconds on high. Stir, then microwave for an additional 30 seconds, ensuring it reaches a temperature of 165°F. Transfer to a large mixing bowl.
- Combine Dry Ingredients: Add the protein powder (and cocoa powder if making the chocolate version) to the bowl and mix well.
- Add Wet Ingredients: Stir in the maple syrup, melted coconut oil, 2 tbsp of milk, and vanilla extract. If the dough feels dry, add 1-2 more tbsp of milk until it reaches the desired consistency.
- Incorporate Mix-Ins: Gently fold in the mini chocolate chips or rainbow sprinkles until evenly distributed.
- Store and Serve: Store the cookie dough in an airtight container in the fridge for 4-5 days. Allow it to come to room temperature before eating, as it will harden when chilled. For convenience, portion it into individual servings before refrigerating.
