INGREDIENTS
- 400g Potatoes
- 150g Milk
- 100g Wheat flour
- 50g Parsley
- 25g Butter
- 2 large Eggs
- Salt, to taste
INSTRUCTION
Step 1: Start by gathering all the necessary ingredients as listed. You can substitute regular flour with gluten-free options like corn, oat, or rice flour. Just keep in mind that you may need to adjust the amount of flour depending on the type used.
Step 2: Peel the potatoes and cut them into cubes.
Step 3: Boil the potato cubes in salted water for about 20 minutes, or until they are fully cooked. The exact cooking time will depend on the type of potatoes and the size of the cubes.
Step 4: Once the potatoes are cooked, drain the water and mash them into a smooth puree using a masher.
Step 5: In a saucepan, heat the milk and butter over low heat, ensuring the butter melts completely without boiling.
Step 6: Pour the hot milk and butter mixture into the mashed potatoes and stir well. Let the mixture cool down. Make sure both the milk and potatoes are hot; using cold milk can cause the potatoes to darken.
Step 7: Wash and dry the parsley, then chop it finely. Feel free to swap it for or add other herbs like dill, cilantro, or green onions, or use a blend of herbs if preferred.
Step 8: Add the eggs to the cooled potato mixture and stir thoroughly. Ensure the potato puree is cool enough inside to prevent curdling when adding the eggs.
Step 9: Sift the flour with a pinch of salt and add it to the potato mixture. Stir until the dough is smooth and slightly runny but viscous. If the mixture is too runny, add a bit more flour until you reach the desired consistency.
Step 10: Add the chopped parsley (or your preferred herbs) to the dough and mix well.
Step 11: Preheat the waffle iron. Scoop some of the potato dough into the waffle iron and cook for 3-5 minutes until golden brown. If the waffles stick, lightly grease the iron with vegetable oil before baking each one. At this stage, you can adjust the texture of the waffles by making them more tender or crispy, depending on your preference.
Step 12: Once the waffles are done, place them on a plate and serve. Enjoy your delicious potato waffles!
