These protein-packed peanut butter cups taste just like a Reese’s! Made with simple ingredients and filled with a smooth, creamy peanut butter protein center, these delightful treats are sure to impress.
INGREDIENTS
For the Chocolate
- 10 oz semi-sweet chocolate chips
- 2 tbsp coconut oil (measured solid)
For the Peanut Butter Filling
- 1/3 cup all-natural creamy peanut butter (ingredients: peanuts + salt), chilled
- 1/4 cup pure maple syrup
- 1/4 cup vanilla protein powder
- 1/8 tsp salt
For Topping
- Flaked sea salt
INSTRUCTIONS
- Prepare the Muffin Tin: Line a 12-cup muffin tin with liners.
- Melt the Chocolate:
- In a microwave-safe bowl, combine chocolate chips and coconut oil.
- Heat in 15-30 second increments, stirring in between, until smooth. Avoid overheating.
- Create the Base Layer:
- Spoon 2 teaspoons of melted chocolate into each liner.
- Tap the tin on the counter to evenly distribute the chocolate.
- Chill in the fridge for 15 minutes to set.
- Prepare the Filling:
- While the chocolate chills, mix peanut butter, maple syrup, protein powder, and salt in a bowl until smooth.
- Assemble the Cups:
- Once the base chocolate layer is firm, divide the peanut butter filling evenly among the 12 cups.
- Top with the remaining melted chocolate and smooth the tops with a spoon.
- Add the Finishing Touch:
- Sprinkle each cup with flaked sea salt.
- Refrigerate for an hour, or until fully set.
- Store Leftovers:
- Keep the cups in a zip-top bag in the freezer for long-term storage.
