- 1 pound lean ground turkey
- 1 cup red onion, chopped
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon garlic powder
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- 8 ounces whole-wheat penne
- 2 cups chicken broth or vegetable stock
- 1 cup marinara sauce
- 3 tablespoons heavy cream
- 5 ounces fresh baby spinach
- ½ cup fresh basil, chopped (plus extra for garnish)
- ½ cup shredded low-moisture mozzarella cheese
- Optional: grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground turkey and cook for 5–7 minutes, breaking it up with a spatula or wooden spoon, until browned.
- Stir in the red onion, cherry tomatoes, oregano, thyme, garlic powder, salt, and pepper. Cook for another 5 minutes, stirring frequently.
- Add the pasta, broth, marinara sauce, and heavy cream to the pan. Stir well and bring the mixture to a gentle boil. Reduce the heat to medium, cover, and let it simmer for 10–12 minutes, or until the pasta is cooked to al dente.
- Gradually mix in the spinach, allowing it to wilt, then stir in the basil and mozzarella until combined.
