Keto chicken curry is a flavorful and nutritious low-carb dish featuring tender chicken in a rich, keto-friendly curry sauce. It’s an easy and family-friendly meal everyone will enjoy!
INGREDIENTS
Chicken
- 2 tbsp coconut oil
- 1 small onion, chopped (20g / 0.7 oz)
- 2 cloves garlic, minced
- 2 tsp fresh ginger, grated
- 450g (16 oz) chicken breast or thigh, cubed
- ½ cup (100ml) tomato puree/passata
- 1 can (400ml) full-fat coconut milk
- 1 tsp salt
- ½ tsp freshly ground black pepper
Curry Spice Blend
- 1 tbsp curry powder (mild or spicy)
- 1 tsp garam masala
- 1 tsp ground paprika
- 1 tsp turmeric
Garnish
- Crushed chili flakes (to taste)
- Fresh cilantro or chopped spring onion
- Lime or lemon slices
- Fresh cucumber and tomato slices

INSTRUCTIONS
- Heat coconut oil in a deep skillet or pot over medium-high heat. Add the onion, garlic, and ginger, sautéing for about 2 minutes until the onion is translucent and golden brown.
- Add the cubed chicken and cook, stirring occasionally, for 5-10 minutes until lightly browned on the edges.
- Stir in salt, pepper, and the curry spice blend, coating the chicken evenly.
- Pour in the coconut milk and tomato puree/passata. If a thinner consistency is preferred, add a bit of water or broth. Stir to combine.
- Cover and simmer for 10-15 minutes.
- Serve with cauliflower rice, cauliflower mash, or another keto-friendly side.
- Garnish with fresh cilantro, chopped spring onion, or crushed chili flakes to taste. Enjoy!
