EASY ORANGE CHICKEN

INGREDIENTS

  • 1.5 lbs boneless, skinless chicken breasts, chopped
  • 2 tbsp cornstarch, divided
  • Salt and black pepper, to taste
  • 2/3 cup fresh orange juice
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1/2 tsp ground ginger
  • 2 cloves garlic, minced
  • Zest of 1 orange
  • 1 tbsp sesame oil
  • 4 cups broccoli florets
  • 1 tbsp sesame seeds

INSTRUCTIONS

  • Preheat the oven to 400°F. Toss the chopped chicken with half the cornstarch, a pinch of salt, and black pepper in a large bowl.
  • In a small bowl, whisk together the orange juice, soy sauce, honey, remaining cornstarch, rice vinegar, ground ginger, minced garlic, and orange zest. Set aside.
  • Heat sesame oil in a large oven-safe skillet over medium heat. Add the chicken in a single layer and cook for 2-3 minutes per side until browned. Turn off the heat, pour the orange sauce over the chicken, and stir to combine.
  • Transfer the skillet to the oven and bake for 10 minutes. Carefully remove the skillet, stir in the broccoli, and return to the oven for an additional 5 minutes.
