CHEESY KETO TACO CASSEROLE (EASY!)

This quick and easy keto taco casserole takes less than 30 minutes to cook! Whether you choose beef or want to lighten it up with turkey, we’ve got tips and tricks to help you make the perfect dish. Simply cook the meat, mix the ingredients, and bake! You’ll love this delicious taco casserole, which is perfect for a low-carb, gluten-free, and sugar-free meal.

INGREDIENTS

  • 2 lb ground beef
  • 16 oz regular cottage cheese (not low-fat)
  • 1 cup chunky salsa
  • 2-3 tbsp sugar-free taco seasoning
  • 1 ¾ cup shredded Mexican-style cheese

INSTRUCTIONS

  • Preheat your oven to 375°F (190°C).
  • Cook the ground beef over medium heat in a skillet. Drain any excess grease.
  • Drain the cottage cheese, as some brands may have excess liquid.
  • In a bowl, combine the cottage cheese, salsa, taco seasoning, and ¾ cup of shredded cheese. Stir in the cooked ground beef.
  • Transfer the mixture to a shallow casserole dish (oval or rectangular, not 8×8).
  • Sprinkle the remaining ¾ cup of shredded cheese on top.
  • Bake for 20 minutes, or until heated through and the cheese has melted. Serve hot and enjoy!

NOTES

  • You can use ground beef or turkey, but if using turkey, add extra seasoning like garlic salt or taco seasoning to enhance its flavor.
  • Choose chunky salsa instead of a runny variety to prevent the casserole from becoming too watery. Drain excess liquid if needed.
  • Optional toppings: lettuce, tomatoes, olives, avocado, sour cream, cilantro, or chives.
  • For a one-pan meal, cook everything in a cast-iron skillet and then bake. Alternatively, cook in any skillet and transfer to a baking dish.
  • If making individual servings in ramekins, reduce the baking time to 15 minutes.
  • Use block cheese and shred it yourself, as pre-shredded cheese often contains starch, which adds extra carbs.
  • You can use cheddar cheese or a mix of cheddar and Monterey Jack for variety.
  • Be sure to choose a low-carb cottage cheese (ours had 5 net carbs per ½ cup serving).
  • Adjust the cheese or cottage cheese amounts as needed to suit your preference.
