ASIAN CROCKPOT SHREDDED CHICKEN

This tasty Asian Crockpot shredded chicken is perfect when served with rice or noodles. It’s an easy and family-friendly slow cooker recipe, ideal for busy weeknights. Give this simple shredded chicken recipe a try tonight!

Ingredients:

  • 4 boneless skinless chicken breasts
  • ⅓ cup honey
  • ⅓ cup ketchup
  • ⅓ cup soy sauce
  • ½ tsp oregano
  • ¼ tsp red pepper flakes
  • 6 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1 tsp toasted sesame seeds
  • Chopped scallions and rice for serving

Instructions:

  • Spray the liner of a 6qt slow cooker with cooking spray.
  • Place the chicken breasts at the bottom of the slow cooker.
  • In a small bowl, whisk together the honey, ketchup, soy sauce, oregano, red pepper flakes, garlic, and ginger.
  • Pour the mixture over the chicken and cover with the lid.
  • Cook on low for 6 hours.
  • Once cooked, let the chicken rest for 10 minutes, then transfer it to a plate and shred.
  • Set the slow cooker to high to bring the sauce to a boil.
  • In a small cup, mix the cornstarch and water, then whisk into the sauce until it thickens.
  • Add the shredded chicken back into the slow cooker and toss with the sauce.
  • Serve over rice, topped with toasted sesame seeds and chopped scallions. Enjoy!
