PEACH FILLO CRINKLE PIE

This isn’t your average pie; it’s the Peach Phyllo Crinkle Pie, a rustic yet elegant dessert that marries the lightness of Mediterranean pastry with the sweet, summery essence of perfectly ripened peaches. 

INGREDIENTS

Pastry:

  • 375g Antoniou Fillo Pastry
  • 150g unsalted butter, melted
  • 4 large peaches, halved and thinly sliced (fresh or preserved)

Custard:

  • 300ml thickened cream (whipping cream in the US)
  • ¾ cup caster sugar
  • 3 eggs
  • 1 teaspoon vanilla bean paste

To Serve:

  • Honey
  • Double cream

METHOD

Preparing the Pastry

  • Remove the Fillo Pastry from the fridge and let it come to room temperature while still in its packaging.
  • Preheat the oven to 180°C (fan-forced).
  • Grease a 30cm round baking dish with melted butter.

Assembling the Fillo Pastry

  • Brush a sheet of Fillo Pastry with melted butter and lay it in the baking dish, extending from one edge to the other. Fold any overhanging pastry back into the dish to create an edge.
  • Repeat this step with three more sheets, rotating slightly each time to evenly cover the sides of the dish.
  • On a clean surface, lay a sheet of Fillo Pastry with the long side facing you. Brush with butter, then place another sheet on top and brush again.
  • Using your fingers, gently fold the stacked pastry into a loose concertina (accordion-style) fold.
  • Coil the folded pastry into a loose spiral and place it in the center of the baking dish.
  • Repeat with the remaining Fillo Pastry, arranging the spirals around the center until the dish is full. Ensure the pastry isn’t packed too tightly—leave space for the custard to seep through.
  • Tuck the peach slices between the layers of pastry.

Making the Custard

  • In a bowl, whisk together the cream and sugar until well combined.
  • Add the eggs and vanilla bean paste, whisking until smooth.
  • Slowly pour the custard over the Fillo Pastry, ensuring it soaks into all the layers and pockets.

Baking & Serving

  • Bake for approximately 40 minutes, or until the pastry is golden and crisp.
  • Remove from the oven and drizzle generously with honey.
  • Serve warm with double cream or ice cream for an indulgent treat.
