Paleo Zucchini Bread – a moist, tender treat naturally sweetened to perfection. Perfect for pairing with a cup of coffee or as a light snack throughout the day! Gluten-Free and Dairy-Free.
Ingredients
- 4 eggs
- 1 teaspoon vanilla extract
- 6 tablespoons pure maple syrup (120g) or honey (125g)
- 1/2 cup coconut oil, melted and cooled (105g)
- 1 1/2 cups shredded zucchini, lightly blotted dry (170g | 6 oz)
- 2/3 cup almond flour (65g)
- 1/2 cup coconut flour (55g)
- 1 teaspoon baking powder
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon sea salt
Instructions
- Position an oven rack in the bottom third of the oven and preheat to 350°F (180°C). Grease an 8×4-inch loaf pan or line it with parchment paper. Set aside.
- In a medium bowl, whisk together the eggs, vanilla extract, maple syrup (or honey), and coconut oil until fully combined. Stir in the shredded zucchini.
- In a separate large bowl, whisk together the dry ingredients.
- Pour the wet mixture into the dry ingredients and mix until smooth, ensuring there are no pockets of flour. Scrape the sides and bottom of the bowl as needed.
- Pour the batter into the prepared loaf pan.
- Bake in the oven for 55-65 minutes, or until a knife inserted into the center comes out mostly clean (only crumbs, no raw batter). Halfway through baking, rotate the pan to ensure even browning. If the top of the loaf begins to darken too much, loosely cover it with foil.
- Remove the loaf from the oven and allow it to cool on a wire rack for about 30 minutes before removing from the pan. Let it cool completely before slicing and enjoying.
Storage
- Store any leftover bread in an airtight container, wrapped tightly in plastic wrap, foil, or a resealable bag. It will stay fresh at room temperature for about 2 days, or in the fridge for up to a week.
Freezing Instructions:
- You can freeze leftover bread for up to 3 months. For easy storage and defrosting, wrap individual slices tightly in plastic wrap or foil, then store in a freezer-safe bag. To thaw, leave at room temperature or reheat in the microwave until warmed through.
