OVEN ROASTED COD, CHERRY TOMATOES, THYME

Cod with cherry tomatoes and thyme is a flavorful, light, and aromatic dish—perfectly simple yet satisfying.

INGREDIENTS

  • 500g cod fillets
  • 500g cherry tomatoes
  • 1 onion
  • 1 clove garlic
  • 4 sprigs thyme
  • Lemon juice (optional)
  • Olive oil
  • Salt and pepper

INSTRUCTIONS

Step 1: Peel and finely chop the onion and garlic.

Step 2: Heat a tablespoon of olive oil in a pan and sauté the onion and garlic until the onion turns translucent. Transfer them to a baking dish.

Step 3: In the same pan, quickly sear the cod fillets for about a minute on each side—just enough to brown them, not fully cook them. Place the fillets in the baking dish.

Step 4: Wash the cherry tomatoes, cut them in half, and arrange them around the fish.

Step 5: Sprinkle with thyme, salt, and pepper. Drizzle generously with olive oil. Bake at 180°C (350°F) for 20 minutes.

Step 6:Serve with a splash of lemon juice for those who enjoy a zesty touch.
