ONE-PAN MEDITERRANEAN CHICKPEA DINNER

You have to try this delicious Mediterranean vegetarian dinner featuring chickpeas and feta cheese! If you’re a fan of garbanzo beans and have some canned chickpeas and fresh veggies to use up, this healthy meal is a must. It’s a one-pan Mediterranean chickpea dish that comes together in just 15 minutes—nutritious, easy, and absolutely delicious!

INGREDIENTS

  • 1 cup chopped kale
  • 1 chopped scallion
  • 1 tbsp olive oil
  • 3 tbsp feta cheese
  • 1 cup canned chickpeas, rinsed and drained
  • Handful of parsley
  • Handful of basil
  • 3 garlic cloves, minced
  • 1 chopped tomato
  • ½ tsp chili powder
  • 1 tbsp chopped jalapeños
  • 4-5 olives

INSTRUCTIONS

  • Prepare your ingredients: Rinse and drain the chickpeas, chop the kale, tomatoes, scallions, basil, and parsley, and mince the garlic.
  • Heat a pan over medium-high heat and add olive oil. Sauté the kale and scallions for about 2 minutes.
  • Add the chopped tomato, chili powder, minced garlic, and chickpeas. Cover and let cook for another 2-3 minutes.
  • By now, the kale should be slightly softened, and the tomato will have released its juices, filling your kitchen with a delicious garlicky aroma.
  • Stir in the parsley, olives, jalapeños, basil, and feta cheese. Cook for another 1-2 minutes until the feta starts to melt slightly.
  • Serve immediately with avocado, tzatziki (if available), toasted bread, and a fresh salad for a complete Mediterranean-inspired meal!
