It’s a one-pan Mediterranean chickpea dish that comes together in just 15 minutes—nutritious, easy, and absolutely delicious!
INGREDIENTS
- 1 cup chopped kale
- 1 chopped scallion
- 1 tbsp olive oil
- 3 tbsp feta cheese
- 1 cup canned chickpeas, rinsed and drained
- Handful of parsley
- Handful of basil
- 3 garlic cloves, minced
- 1 chopped tomato
- ½ tsp chili powder
- 1 tbsp chopped jalapeños
- 4-5 olives

INSTRUCTIONS
- Prepare your ingredients: Rinse and drain the chickpeas, chop the kale, tomatoes, scallions, basil, and parsley, and mince the garlic.
- Heat a pan over medium-high heat and add olive oil. Sauté the kale and scallions for about 2 minutes.
- Add the chopped tomato, chili powder, minced garlic, and chickpeas. Cover and let cook for another 2-3 minutes.
- By now, the kale should be slightly softened, and the tomato will have released its juices, filling your kitchen with a delicious garlicky aroma.
- Stir in the parsley, olives, jalapeños, basil, and feta cheese. Cook for another 1-2 minutes until the feta starts to melt slightly.
