CINNAMON COLLAGEN PROTEIN BARS (PALEO, KETO)

These Cinnamon Collagen Protein Bars are a delicious and nutritious low-carb Paleo snack. Packed with superfoods like almonds, pumpkin seeds, and collagen, they’re naturally sweetened with monk fruit and infused with warm cinnamon flavor. Best of all, these no-bake bars are easy to make and low in sugar!

INGREDIENTS

  • ½ cup almonds (raw or dry roasted)
  • ½ cup raw pumpkin seeds
  • ¼ cup ground flaxseed*
  • ¼ cup collagen peptides
  • 2 tablespoons monk fruit sweetener (or coconut sugar)
  • 1 teaspoon cinnamon
  • Pinch of salt (omit if using salted almonds)
  • 2 tablespoons water
  • 1 teaspoon vanilla extract

INSTRUCTIONS

  • In a food processor, blend the almonds and pumpkin seeds until they reach a coarse flour consistency.
  • Add the ground flaxseed, collagen, monk fruit sweetener, cinnamon, and salt. Blend until well combined.
  • Pour in the water and vanilla extract, then blend again until the mixture forms a dough-like ball.
  • Press the dough firmly into a lined 8″ x 4″ baking pan.
  • Freeze for at least one hour to set.
  • Once firm, remove from the pan and cut into eight equal bars.
  • Store in the refrigerator or freezer until ready to enjoy.
