Ingredients
- 1 1/2 cups quinoa
- 2 cups water
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 (8 oz.) package cremini mushrooms, thinly sliced
- 2 cups fresh spinach
- 2 tablespoons soy sauce
- 1/8 teaspoon garlic powder
- Salt and pepper, to taste

- Cook the Quinoa: In a medium to large saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed and the quinoa is tender.
