MEATBALL SUBS

These simple Italian Meatball Subs feature homemade meatballs, marinara sauce, and melted mozzarella on buttery, toasted sub rolls. They’re quick to prepare, making them an ideal choice for busy weeknights when homework, laundry, and after-school activities take priority.

INGREDIENTS

  • 1 lb ground beef
  • 1/2 cup Italian bread crumbs
  • 2 tablespoons grated Parmesan cheese (plus extra for topping)
  • 1 egg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 cups marinara or pasta sauce
  • 4 sub rolls
  • 1 1/2 cups finely shredded mozzarella cheese
  • 1 tablespoon chopped fresh Italian parsley or basil (optional)

INSTRUCTIONS

  • In a large bowl, combine ground beef, Italian breadcrumbs, Parmesan cheese, egg, oregano, basil, onion powder, garlic powder, salt, and pepper. Roll the mixture into 1-inch meatballs.
  • Heat a large skillet over medium heat and brown the meatballs on all sides. Drain any excess grease. Add marinara sauce to the skillet with the meatballs and let it simmer over medium-low heat for 15 minutes.
  • While the meatballs are simmering, split, butter, and toast the sub rolls under the broiler.
  • Once the rolls are toasted, spread half of the shredded mozzarella cheese on the bottom of each roll. Add 5 meatballs to each roll and top with the remaining cheese. Broil until the cheese melts and turns golden brown.
  • If desired, sprinkle with additional Parmesan cheese and chopped parsley. Serve immediately.

NOTES

  • You can use meatless pasta sauce, homemade marinara, or spaghetti sauce.
  • For extra flavor, spread garlic butter on the rolls before toasting them in the oven.
  • Experiment with different cheeses like provel, fontina, or provolone for variety.
  • Top with freshly grated Parmesan or fresh herbs like Italian parsley, thyme, or a pinch of red pepper flakes.
  • Store leftovers in an airtight container in the fridge. Reheat in the microwave at reduced power.
