- 1 lb (455 g) ground beef
- 1 egg
- 1 cup (110 g) grated Parmesan cheese
- 1 cup (40 g) fresh parsley, chopped
- 1 tablespoon salt
- 1 tablespoon pepper
- ½ cup (50 g) mozzarella cheese, cubed
- 3 cups (750 g) mashed potatoes
- 2 cups (250 g) flour
- 4 cups (960 mL) vegetable oil
- Fresh parsley, chopped, for garnish
- Marinara sauce, for serving
INSTRUCTIONS
- Preheat the oven to 350ºF (180ºC).
- Prepare the meat mixture: In a large bowl, combine ground beef, egg, Parmesan cheese, parsley, salt, and pepper. Mix until evenly combined.
- Shape the meatballs: Take a small portion of the meat mixture (about the size of a ping pong ball) and flatten it slightly. Place a cube of mozzarella cheese in the center and seal the meat around it, forming a ball.
- Bake the meatballs: Arrange the meatballs on a baking sheet and bake for 15 minutes.
- Coat with mashed potatoes: Take a baked meatball and cover it with a layer of mashed potatoes, shaping it into a smooth ball with your hands. Repeat for all meatballs.
- Dredge in flour: Roll each potato-covered meatball in flour to coat evenly.
- Fry the meatballs: Heat the vegetable oil to 350ºF (180ºC) in a deep pan or fryer. Fry the coated meatballs in batches until golden brown and crispy.
- Drain and garnish: Transfer the fried meatballs to a plate lined with paper towels to absorb excess oil. Sprinkle with chopped parsley.
- Serve: Serve warm with marinara sauce on the side for dipping.
