LOW-CARB PANCAKES THAT WON’T RAISE BLOOD SUGAR

Get ready for THEE best-tasting low-carb pancakes—seriously! And the best part? They won’t send blood sugar levels soaring. I stand by these pancakes 100%. Oh, and did I mention they’re cake batter flavored? YUM!

EQUIPMENT

  • Dash Mini Griddle

INGREDIENTS

  • 1 cup almond flour
  • 1 Tbsp date sugar
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/8 tsp xanthan gum
  • 1 Tbsp coconut flour
  • 4 eggs
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1 tsp cake batter extract
  • 2 Tbsp melted butter

INSTRUCTIONS

  • In a bowl, whisk together all dry ingredients.
  • In a separate bowl or a large Pyrex measuring cup, whisk together all wet ingredients except the melted butter.
  • Pour the wet ingredients into the dry ingredients and whisk until fully combined. Note: The batter may have an orange tint from the cake batter extract—this is normal!
  • Stir in the melted butter, then let the batter rest for a few minutes. Avoid stirring it again after resting!
  • Preheat the Dash Mini Griddle. Once the indicator light turns off, it’s ready to use.
  • Use a 1/4 cup measuring cup to scoop the batter onto the center of the griddle. If needed, use the back of the measuring cup to gently spread the batter toward the edges. Unlike traditional pancake batter, it may not spread on its own.
  • Close the lid. The light will turn on, and when it turns off (after about a minute), the pancake is done!
  • The top may not brown completely—this is normal. Flip the pancake, and you’ll see the bottom is beautifully golden brown.
