INGREDIENTS

  • 2 3/4 cups almond flour
  • 6 tablespoons powdered psyllium husk
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup warm water
  • 3 eggs
  • 1 egg, whisked
  • Cooking spray or oil

For Serving:

  • Keto queso
  • Mustard

INSTRUCTIONS

  • Preheat the oven to 375°F and line a baking sheet with parchment paper.
  • In a large bowl, combine the almond flour, psyllium husk, baking powder, and kosher salt.
  • Add the warm water and eggs to the dry ingredients and stir until fully combined.
  • Wet your hands and divide the dough into 8 even balls.
  • Roll each ball into a 10-13 inch rope between your hands and parchment paper, making sure the diameter is even.
  • Twist each rope into a pretzel shape. Start by forming a “U” shape, twist the ends away from you, flip the twist, and press the ends down into the bottom of the “U”.
  • Place the pretzels on the prepared baking sheet, then brush them with the whisked egg.
  • Bake in the preheated oven for 24-26 minutes, or until the tops are golden.
  • After baking, let the pretzels cool slightly, then spray with cooking spray or brush with oil. Sprinkle with kosher salt. Serve with keto queso or mustard, and enjoy!
