LEFTOVER CHICKEN GYROS BOWLS

You’ll be excited for leftovers from rotisserie chicken after trying these healthy chicken gyro bowls!

INGREDIENTS

For the Chicken:

  • 150g / 5oz cooked chicken
  • 1/2 tsp oregano
  • 1/2 tsp chili powder
  • 1 tsp paprika
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • 1/4 cup chopped parsley
  • Black pepper, to taste
  • 2 garlic cloves, minced
  • 1/2 pointed red pepper

For the Salad:

  • 1/4 avocado
  • 1 cucumber
  • 1 tomato
  • 4-5 basil leaves
  • 3 radishes
  • 1/3 red onion
  • 1 tsp olive oil
  • Salt and pepper, to taste

Additional Ingredients:

  • Feta cheese
  • Olives

INSTRUCTIONS

  • Shred the cooked chicken and add it along with the pointed red pepper to a nonstick pan with a little olive oil. Stir in the oregano, paprika, chili powder, black pepper, and minced garlic. Cook for 2-3 minutes, then add the lemon juice and remove from heat. Stir in the chopped parsley.
  • Combine all salad ingredients in a bowl and toss them together.
  • In a serving bowl, place the chicken on one side and the salad on the other. Top with feta cheese and serve with olives on the side.
  • For an extra touch, mix 2/3 cup yogurt with 1-2 minced garlic cloves and a pinch of salt to create a creamy garlic yogurt sauce.
  • Serve immediately and enjoy!
