TACO CASSEROLE WITH TORTILLAS

This taco casserole with tortillas is absolutely delicious! It layers perfectly seasoned ground beef, salsa con queso, and crispy tortillas, all topped with a gooey Mexican cheese blend. It’s so simple to prepare, you might just want to enjoy it for dinner every night!

INGREDIENTS

  • 1 lb ground beef
  • 1 ½ tbsp taco seasoning mix
  • ½ cup water
  • ½ cup salsa con queso
  • 3 8-inch flour or corn tortillas
  • 2 cups shredded Mexican cheese blend or cheddar cheese
  • Sour cream (for serving)

INSTRUCTIONS

  • Preheat the oven to 350°F.
  • Heat oil in a large skillet. Add the beef and cook until browned.
  • Stir in the taco seasoning mix and water. Simmer for 2-3 minutes.
  • Mix in the salsa con queso and remove from the heat.
  • Spray an 8-inch round baking dish with cooking spray.
  • Layer one tortilla at the bottom of the dish. Add ⅓ of the beef mixture on top, followed by ⅓ of the shredded cheese.
  • Repeat the layers twice more, finishing with a layer of cheese.
  • Bake for 20 minutes, until the cheese is melted.
  • Let the casserole cool for a few minutes before slicing and serving.
  • Serve with sour cream.
