INGREDIENTS

  • 2 chicken breasts, halved horizontally (about 1 pound)
  • Salt and pepper, to taste
  • 4 tablespoons salted butter, divided
  • 5 cloves garlic, minced
  • ¾ cup heavy cream
  • Fresh parsley, chopped (optional, for garnish)

INSTRUCTIONS

  • Slice each chicken breast in half horizontally to create two thinner pieces. Season both sides with salt and pepper.
  • Heat a heavy-bottomed skillet or Dutch oven over medium heat until hot.
  • Add 3 tablespoons of butter to the pan and stir with a wooden spoon or tongs until melted.
  • Place the chicken pieces in a single layer in the skillet. Cook for 4-5 minutes on one side, then flip and cook for another 3-5 minutes, ensuring the internal temperature reaches at least 165°F.
  • Transfer the cooked chicken to a plate and set aside.
  • Remove the skillet from the heat and melt the remaining 1 tablespoon of butter.
  • Stir in the minced garlic, cooking for 30 seconds to 1 minute until fragrant.
  • Pour in the heavy cream, using a wooden spoon to scrape up any browned bits from the bottom of the pan. Return the skillet to medium heat.
  • Simmer the sauce for 1-2 minutes, stirring frequently until it thickens slightly.
  • Remove the skillet from the heat, return the chicken to the pan, and spoon the sauce over the chicken to coat.
  • Garnish with parsley if desired, and serve immediately.
