LOW CARB PHILLY CHEESE STEAK CASSEROLE

INGREDIENTS

  • 2 lb thinly sliced beef (sirloin tip, ribeye, or shaved beef; avoid stew meat)
  • 1 small onion, sliced
  • 2 bell peppers, sliced
  • 2 cups button or baby bella mushrooms, sliced (optional)
  • 2 cups shredded provolone or provolone slices
  • 4 oz cream cheese
  • ½ cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic salt (or a mix of salt and garlic powder)
  • ½ teaspoon ground black pepper

INSTRUCTIONS

  • Preheat and Prep: Preheat the oven to 350°F. Heat olive oil in a large skillet (preferably cast iron or oven-safe) over medium-high heat.
  • Cook the Beef: Add the thinly sliced beef to the skillet, season with garlic salt and black pepper, and cook until browned. Remove the beef from the pan and set it aside, leaving about 2 tablespoons of grease in the skillet. If needed, add a bit more oil for cooking the vegetables.
  • Sauté the Vegetables: Add the sliced onion, bell peppers, and mushrooms to the skillet. Cook until softened.
  • Create the Sauce: Stir in the Worcestershire sauce, beef broth, and cream cheese. Mix until the cream cheese is fully melted and the sauce is smooth.
  • Combine Ingredients: Return the cooked beef to the skillet, stirring to combine all the ingredients. If your skillet isn’t large or oven-safe, transfer the mixture to a 9×13 baking dish at this stage.
  • Add the Cheese: Top the mixture with shredded provolone or lay provolone slices evenly over the surface.
  • Bake and Broil: Bake in the preheated oven for 15 minutes, or until heated through. For a crispy cheese topping, broil for an additional 2-3 minutes.
