This moist banana bread is bursting with sweet banana flavor and is my go-to one-bowl recipe for a delicious quick bread. It’s a classic family recipe from my husband that’s perfect for breakfast, snacks, or a sweet treat any time of day.
INGREDIENTS
- 2 eggs
- 3 tablespoons sour milk
- ¼ teaspoon salt
- 3 bananas (mashed)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups all-purpose flour
- 1 cup sugar
- ½ cup vegetable oil
Mix-Ins
- ½ cup walnuts (or other tree nuts)
INSTRUCTIONS
- Preheat the oven to 325°F (163°C).
- Line a bread pan with parchment paper, leaving an overhang for easy removal. Spray the corners with baking spray to prevent sticking.
- In a medium-sized bowl, whisk the eggs and sour milk until foamy.
- Use a fork to mash the bananas, then add the mashed bananas, salt, baking powder, baking soda, flour, sugar, and vegetable oil. Stir until well combined.
- If desired, fold in walnuts and/or raisins.
- Pour the batter into the prepared pan and transfer it to the preheated oven.
- Bake for one hour. Check for doneness by inserting a toothpick into the center; it should come out clean when the bread is finished baking.
- Allow the hot bread to cool in the pan for 15 minutes before lifting it out using the parchment paper overhang. Place it on a cooling rack until completely cool.
Notes
- To make sour milk, add one teaspoon of white vinegar to regular milk and let it sit for 5 minutes.
