INGREDIENTS

  • 3 boneless, skinless chicken breasts, trimmed of fat and cut into chunks
  • 2–3 medium zucchini, thickly sliced and quartered
  • 2–3 medium yellow squash, thickly sliced and quartered
  • 12 oz white button mushrooms, washed and quartered
  • Salt and pepper, to taste
  • 3 tbsp minced garlic
  • 1/3 cup olive oil, plus 2 tbsp for drizzling
  • 1/4–1/3 cup soy sauce
  • 1 1/2 tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • 1 tsp garlic powder

INSTRUCTIONS

  • In a large mixing bowl, combine all ingredients except for the 2 tablespoons of olive oil. Stir until the chicken and vegetables are evenly coated.
  • Transfer the mixture to the air fryer basket, spreading it in an even layer. Drizzle the remaining olive oil evenly over the top.
  • Air fry at 375°F for 15 minutes.
  • Serve with steamed white rice and yum yum sauce.

NOTES

  • Feel free to adjust the vegetables to your liking. Not a fan of mushrooms? Simply leave them out.
  • For a lower sodium option, use low-sodium soy sauce.
  • Add extra garlic if desired, but avoid adding more sesame oil as it has a strong flavor.
