INGREDIENTS (MAKES 6 SERVINGS)
- 60g butter*
- 60g peanuts*
- 30g brown erythritol*
- 30g creamy sugar-free peanut butter*
- Sea salt flakes* (optional)
- Chocolate with 85%+ cocoa content* (optional)

INSTRUCTIONS
Step 1: Melt the butter in a non-stick pan over low heat.
Step 2: Add the peanuts, brown erythritol, and sugar-free peanut butter to the pan. Stir well until the mixture becomes smooth and fully combined.
Step 3: Line a baking dish with parchment paper and pour in the mixture. Use a small dish to keep the mixture thick and compact.
Step 4: Refrigerate the caramel mixture for about an hour until firm.
Step 5 (Optional): For extra flavor, sprinkle sea salt flakes on top. If desired, melt some dark chocolate in the microwave or using a double boiler and drizzle it over the caramel mixture.
Step 6: Remove from the fridge and cut into six bite-sized pieces.
STORAGE
Store the peanut caramel squares in the fridge, covered with cling film, for up to one week.
