KETO ITALIAN SUB ROLL-UPS (LOW CARB)

These Italian Sub Roll-Ups are a delicious and easy way to enjoy all the flavors of your favorite Italian sub without the carbs. They’re perfect for a quick lunch, snack, or even a party appetizer.

INGREDIENTS

  • 4 slices Genoa salami
  • 4 slices mortadella
  • 4 slices sopressata
  • 4 slices pepperoni
  • 4 slices provolone cheese (omit for dairy-free option)
  • Paleo lime mayo or store-bought mayo (we love Chosen Foods Avocado Oil Mayo)
  • Shredded lettuce
  • Optional toppings: banana peppers, jalapeños, roasted red peppers, black olives
  • Avocado oil or olive oil
  • Apple cider vinegar
  • Italian seasoning
  • Toothpicks

INSTRUCTIONS

  • Layer the Meats: Arrange the slices from largest to smallest. If using Boar’s Head, the order is:
    • Genoa salami
    • Mortadella
    • Sopressata
    • Pepperoni
  • Add the Fillings: Spread a thin layer of mayo across the stack, leaving space at the top to prevent overflow.
  • Assemble the Roll-Ups:
    • Place a slice of provolone halfway from the top.
    • Add a small handful of shredded lettuce to the lower half.
    • Top with any extra toppings of choice.
  • Roll & Secure:
    • Keep toothpicks handy.
    • Starting from the bottom of the cheese, carefully roll the stack as tightly as possible, tucking in any escaping fillings.
    • Secure the edges with a toothpick.
  • Prepare the Dipping Sauce:
    • In a small ramekin, mix 2 parts oil with 1 part vinegar.
    • Sprinkle with Italian seasoning.
  • Serve & Store:
    • Dip the roll-ups into the seasoned oil and vinegar before enjoying.
    • Store leftovers individually wrapped in plastic wrap in the refrigerator for up to a week—perfect for quick lunches!
