KETO CURRIED SAUSAGES

INGREDIENTS

  • 500g beef sausages
  • 2 tbsp oil
  • ½ onion, sliced
  • 1 tsp crushed garlic
  • 1–2 tbsp curry powder (adjust to taste)
  • 1 cup beef stock
  • 2 tbsp tomato paste
  • ¼ cup cream
  • 50g baby spinach leaves

INSTRUCTIONS

  • Heat 1 tbsp of oil in a large saucepan over medium heat. Prick the sausages with a fork to release excess fat, then cook, turning regularly, until just done. Remove and set aside.
  • In the same pan, add the remaining 1 tbsp of oil, along with the sliced onion and garlic. Sauté until soft and fragrant.
  • Stir in the curry powder and cook for 1 minute until aromatic.
  • Pour in the beef stock and add the tomato paste, mixing well. Simmer for about 10 minutes until the sauce thickens. Taste and adjust seasoning if needed.
  • Slice the sausages into 2cm chunks and return them to the pan, coating them in the sauce.
  • Stir in the cream until evenly combined, then add the baby spinach and toss until just wilted.
  • Serve immediately.
