KETO CREAMY CHICKEN AND ASPARAGUS RECIPE

This Creamy Chicken and Asparagus recipe is a quick 30-minute, one-pan meal that’s packed with flavor! With only 4g of net carbs, it’s the perfect keto/low-carb option for when you want a tasty, satisfying dish without the hassle.

INGREDIENTS

  • 1 tbsp olive oil
  • 1/2 medium onion, sliced
  • 2 garlic cloves, minced
  • 1 tbsp butter
  • 2 lbs boneless, skinless chicken breasts (about 6 breasts), pounded thin
  • 1/4 cup chicken broth
  • 3/4 cup heavy whipping cream
  • 1 oz cream cheese
  • 2/3 cup Cheddar cheese
  • 1/2 cup Parmesan cheese
  • 1 tbsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 lb asparagus, chopped

INSTRUCTIONS

  • Heat olive oil in a skillet over medium heat. Add sliced onions and minced garlic, sautéing until tender.
  • Remove the onions and garlic, then add butter to the skillet. Sear chicken breasts on both sides until golden brown. Once browned, remove the chicken and set aside.
  • In the same skillet, pour in the chicken broth, heavy cream, and cream cheese. Stir in the Cheddar and Parmesan cheeses, followed by the sautéed onions, garlic, and spices. Whisk until the sauce is smooth and the cheese melts.
  • Return the chicken breasts to the skillet. Cover and simmer on low for 10 minutes.
  • Add chopped asparagus to the skillet, cover again, and simmer for another 12 minutes.
  • Remove the lid and let the sauce simmer on low until it thickens.
