This Family-Friendly Gluten-Free & Keto Cheesy Spinach Ravioli Recipe comes together quickly and easily. The ravioli tastes just like traditional ravioli, but you’d never guess it’s made entirely from cheese! Instead of pasta, this recipe uses mozzarella cheese slices to create the “shell.”
INGREDIENTS
- 8 Mozzarella Cheese Slices
- 1/2 Cup Ricotta Cheese
- 1 Cup Spinach
- 1/8 Cup Fresh Basil
- 1 Tsp Minced Garlic
- 1 Tbsp Butter
- 1/2 Tsp Salt

INSTRUCTIONS
- Preheat the oven to 325°F. In a small frying pan, sauté the garlic in butter for about 1 minute. Add the spinach and cook for 1-2 minutes until it’s tender. Chop the cooked spinach into small pieces.
- In a mixing bowl, combine the ricotta cheese, chopped basil, spinach, garlic, and salt. Stir well to mix everything together.
- Using a teaspoon, form 16 small balls of the ricotta mixture.
- Cut each mozzarella slice in half and lay them out on two parchment paper-lined baking sheets (not wax paper). Bake the cheese slices for about 4-5 minutes, or until they’re fully melted.
- Remove the cheese from the oven and let it cool slightly. Place one ricotta ball on each slice of cheese.
- Fold the cheese slices in half to form squares, pressing the edges firmly to seal them. Return to the oven for another 3-4 minutes.
- Broil the ravioli for 2 minutes. Use a fork to press the edges of the squares, then broil for another 2 minutes until golden.
