INGREDIENTS
- 2 oz cream cheese
- 1 1/2 cups shredded mozzarella cheese (plus extra for topping, if desired)
- 3/4 cup almond flour
- 1/4 cup grated Parmesan cheese
- 2 eggs, beaten
- 2 oz (2 slices) Gouda cheese, cut into small squares
- 6 beef patties (approx. 100g each, fresh or precooked)
- 1/2 tsp Italian seasoning
- 1 tsp olive oil (for greasing)
- Salt and pepper to taste

INSTRUCTIONS
- Preheat the oven to 400°F (200°C).
- In a microwave-safe bowl, combine the cream cheese and mozzarella. Microwave for 30–40 seconds, then stir until smooth and well blended.
- In a separate bowl, whisk the eggs, then mix in the almond flour, Parmesan cheese, Italian seasoning, salt, and pepper. Add the melted cheese mixture and stir until fully combined.
- Cover the dough with plastic wrap and refrigerate for 30 minutes until firm.
- Lightly grease a muffin tin with olive oil. Divide the dough into six equal portions, rolling each into a ball before flattening it.
- Place a beef patty and a piece of Gouda cheese in the center of each dough round. Carefully fold the dough around the filling, sealing it completely.
- Place the filled biscuits into the muffin tin and, if desired, sprinkle extra mozzarella on top.
- Bake for 10–15 minutes or until golden brown.
