INGREDIENTS
- 1/4 cup cream cheese
- 3 eggs
- 1/4 cup + 2 tbsp coconut flour
- 1 tsp baking powder
- 1 cup broccoli florets
- 1/2 cup shredded cheddar cheese
- 3/4 cup shredded chicken breast
- Salt & pepper, to taste
- 2 tbsp butter (for frying)
INSTRUCTIONS
- In a blender, combine eggs and cream cheese, blending until smooth. Add the coconut flour and baking powder, then blend again until fully combined.
- Trim the stems off the broccoli florets and steam or boil them for 2 minutes, or until blanched.
- In a large bowl, mix the shredded chicken, broccoli, cheddar cheese, salt, and pepper into the batter. Stir until everything is well incorporated.
- In a frying pan, melt butter over medium-low heat. Spoon about 1/4 cup of batter at a time into the pan, cooking each fritter until both sides are golden brown.
