INGREDIENTS

  • 1 cup + 2 Tbsp almond flour, chilled
  • 2 Tbsp cold salted butter
  • 1 tsp baking powder
  • 3/4 cup cold egg whites
  • 1/4 tsp salt

INSTRUCTIONS

  • Prep Your Ingredients: Chill the almond flour and butter in the bowl of your food processor for 20 minutes.
  • Cut the Butter: Once chilled, pulse the almond flour and butter in the food processor until the butter forms pea-sized pieces.
  • Mix Dry Ingredients: Add the baking powder and salt to the mixture. Pulse briefly to combine.
  • Incorporate Egg Whites: Gradually add the cold egg whites while pulsing, stopping as soon as the dough comes together. It’s okay if the dough looks lumpy—don’t over-process it.
  • Form the Biscuits: Using a cookie scoop, portion the dough onto a parchment-lined baking sheet.
  • Bake: Bake at 400°F (200°C) for 12-14 minutes, or until the biscuits are golden brown.
