TURKEY SWEET POTATO SOUP

This hearty turkey sweet potato soup is easy to make, cozy, and satisfying! Perfect for using ground turkey, you can whip up this flavorful dish in just 35 minutes.

INGREDIENTS

  • 2 tablespoons oil (see note 1)
  • 1 pound (454 g) 93% lean ground turkey
  • 2 cups (282 g) chopped onion (about 1 large onion)
  • 1 ½ teaspoons kosher salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • ½ teaspoon coriander
  • 4 cups (586 g) sweet potato cubes, cut into ½-inch pieces (about 1 very large sweet potato)
  • 1 cup (184 g) long-grain white rice, rinsed
  • 6–8 cups (1.4–1.9 L) broth (turkey, chicken, beef, or any type)

INSTRUCTIONS

  • Cook the turkey: Heat the oil in a large stockpot over medium-high heat. Once hot, add the ground turkey and cook for 3–4 minutes, stirring frequently to break it into smaller chunks, until browned.
  • Add spices and onions: Stir in the chopped onion, kosher salt, pepper, paprika, cumin, and coriander. Cook for 2–3 minutes, or until the onions soften.
  • Combine with sweet potato and rice: Add the sweet potato cubes and rice to the pot. Stir and cook for about 1 minute.
  • Simmer the soup: Pour in 6 cups of broth and bring it to a boil over high heat. Once boiling, reduce the heat to maintain a gentle boil, partially covering the pot with a lid (leave a 1–2-inch opening). Let the soup gently boil for 15 minutes, stirring occasionally, until the rice is cooked and the sweet potato is tender. Add more broth if needed to maintain the desired consistency.
  • Taste and adjust: Taste the soup and adjust seasoning with additional salt or pepper as needed. If the soup is too thick, stir in extra broth to thin it out.

NOTES

  • Choice of oil: Olive oil works great, but feel free to use vegetable, canola, grapeseed, or your preferred cooking oil.
  • Salt type: Kosher salt is coarse-grained. If substituting fine-grained salt, start with 1 teaspoon and adjust to taste.
