WHAT IS BEEF & BROCCOLI?
Beef & broccoli is a beloved dish commonly found in Chinese restaurants, featuring tender slices of beef coated in a savory sauce with rich Asian flavors.
Best Beef for the Dish
Flank steak is the ideal choice for making beef & broccoli, as it’s lean and tender. Skirt steak is another excellent option, though it’s a bit fattier, it still adds great flavor to the dish.
INGREDIENTS
- 1 1/2 lb flank steak, thinly sliced against the grain
- 1 1/2 tsp cornstarch
- 1 tsp kosher salt
- 1 tbsp Worcestershire sauce
- 1 cup beef broth
- 1/4 cup low-sodium soy sauce
- 1 tsp sesame oil
- 1/2 tsp crushed red pepper
- 1/2 tsp ground ginger
- 1 tsp sugar
- 1 tbsp minced garlic
- 1 tsp onion powder
- 1 1/2 tsp cornstarch (for slurry)
- 3 cups broccoli florets
- 2 tbsp grapeseed oil
- 2 tbsp unsalted butter
- Sesame seeds for garnish (optional)
INSTRUCTIONS
- In a large bowl, season the sliced beef with kosher salt, Worcestershire sauce, and 1 1/2 tsp cornstarch. Toss until well-coated.
- In a separate bowl, whisk together the beef broth, soy sauce, sesame oil, crushed red pepper, ground ginger, sugar, minced garlic, and onion powder. Set aside.
- Heat a large skillet over medium heat and add 1 tablespoon of grapeseed oil and 1 tablespoon of butter. Once the oil is hot, add the beef in two batches. Stir constantly and cook until the beef is nearly done. Remove the beef with a slotted spoon and set it aside on a plate.
- Add the remaining tablespoon of grapeseed oil and butter to the skillet. Cook the second batch of beef and set it aside with the first.
- In a small bowl or measuring cup, combine 1 1/2 tsp cornstarch with 1/2 cup of water to create a slurry.
- Pour the prepared sauce into the skillet and bring to a simmer. Add the cornstarch slurry and stir. Toss in the broccoli and simmer for about 3 minutes, or until the broccoli reaches your desired tenderness.
- Return the cooked beef to the skillet and stir to combine with the sauce and broccoli. Let it simmer for another 2-3 minutes.
- Serve immediately, ideally over rice. Garnish with sesame seeds if desired.
