INGREDIENTS
- 1 lb ground beef
- 3 cups Rao’s marinara sauce
- 2 cups mozzarella cheese, grated (freshly shredded melts best!)
- 10 oz frozen steamed riced cauliflower
- ½ cup beef broth
- ½ onion, chopped (or 1 tsp onion powder for fewer carbs)
- 1 tsp garlic powder (or 2 cloves fresh minced garlic)
- ½ tsp oregano
- ½ tsp pepper
- Salt to taste

INSTRUCTIONS
- Preheat the oven to 400°F.
- In an oven-safe skillet, brown the ground beef over medium heat for 5-7 minutes until fully cooked. Drain any excess grease.
- Add the chopped onion and sauté for 3 minutes until soft and fragrant. Stir in the garlic powder and oregano for added flavor.
- Steam the riced cauliflower according to package directions, then strain well to remove excess moisture. Add it to the skillet.
- Pour in the marinara sauce and beef broth, stirring to combine. Simmer uncovered for 15 minutes to allow the sauce to thicken.
- Sprinkle the shredded mozzarella cheese evenly over the top.
- Transfer the skillet to the oven and bake for 5 minutes, or until the cheese starts to melt.
- Move the skillet to the top oven rack and broil for 1-2 minutes until the cheese is golden and bubbly.
- Remove from the oven and serve immediately!
