This Southern Tomato Pie is the perfect taste of summer, featuring garden-fresh tomatoes, green onions, and fragrant basil, all topped with a deliciously gooey, cheesy layer. It’s a true Southern classic!
INGREDIENTS
- 4 medium tomatoes
- Salt
- 1 9-inch pie crust (blind-baked)
- 3/4 cup mayonnaise
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 3 cloves garlic (minced)
- 8 fresh basil leaves (chopped)
- 1/2 cup chopped green onions
INSTRUCTIONS
- Preheat the oven to 350°F (175°C).
- Wash and thinly slice the tomatoes. Sprinkle them with salt and place them on a sheet pan lined with paper towels to absorb excess moisture. Let them rest for about 10 minutes.
- In a medium bowl, combine the mayonnaise, mozzarella cheese, Parmesan cheese, and minced garlic. Stir to combine and set aside.
- After the tomatoes have rested, use more paper towels to blot off any remaining moisture. Layer the tomato slices in the prepared pie crust, sprinkling chopped basil and green onions between each layer. Top with the cheese mixture.
- Bake for 35 to 40 minutes, or until the topping is golden and bubbly. For easy cleanup, place the pie on a rimmed baking sheet in case of any spills. Let the pie rest for about 15 minutes before slicing and serving.
